‘Temporary’ and ‘restaurant’ are generally thought to be two mutually exclusive concepts. Traditionally, a restaurant aims to stick around for the long haul, establishing a solid following over many years, but a team of Finnish food visionaries conceived a concept that sheds new light the restaurant’s role in society. A temporary exhibition and restaurant, HEL YES! served hungry and socially conscious Londoners over 14 days during the London Design Festival. Showcasing the delicacies of primitive Finnish cuisine, the kitchen dished up tastes inspired by the Nordic forests. Focused primarily on fresh ingredients, the restaurant pushed fancy decorations to one side, and instead aimed to harness substance and authenticity. Using traditional cooking techniques and a hunting-and-gathering approach when sourcing ingredients in London, HEL YES! celebrated the way food is prepared, consumed and enjoyed.
